This Chicken Alfredo Lasagna Soup combines creamy Alfredo sauce, tender shredded chicken, and lasagna noodles into one hearty, comforting one-pot meal that’s perfect for cozy nights.

- 2 tablespoons olive oil or butter
- 1 yellow onion, diced
- 3–4 garlic cloves, minced
- 3 cups cooked shredded chicken (rotisserie or grilled)
- 6 cups chicken broth
- 1 cup heavy cream
- 4 oz cream cheese (optional)
- 1 cup fresh grated parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 8 lasagna noodles, broken into 2-inch pieces
- 1 cup spinach or kale (optional)
Instructions
- Heat olive oil or butter in a large pot or Dutch oven.
- Add diced onions and garlic, sauté until soft and fragrant (about 4–5 minutes).
- Stir in shredded chicken, Italian seasoning, salt, and pepper.
- Pour in chicken broth and bring to a light boil.
- Add broken lasagna noodles and simmer uncovered for 8–10 minutes, stirring occasionally.
- Reduce heat and stir in heavy cream and cream cheese until smooth.
- Add grated parmesan, stir until melted and fully combined.
- Top with mozzarella cheese, cover, and let melt for 2–3 minutes.
- If using, stir in spinach or kale just before serving.
- Taste and adjust seasoning or thickness with extra cheese or broth as needed.
Notes
For best results, use freshly grated cheeses and avoid overcooking the noodles. Add red pepper flakes or sausage for a spicy twist.
