- 2 teaspoons chipotle peppers in adobo, minced
- 1 teaspoon ancho chili powder
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- 1 clove garlic, minced (or ½ teaspoon garlic powder)
- 1 teaspoon apple cider vinegar
- 1 teaspoon brown sugar or honey
- 1 tablespoon olive oil
- Salt and black pepper to taste
- Optional: splash of water if paste is too thick
Instructions
- Heat olive oil in a small saucepan over medium-low heat.
- Add tomato paste and stir for 1–2 minutes to reduce acidity.
- Add chipotle, garlic, chili powder, paprika, and cumin. Cook for 30 seconds.
- Stir in vinegar, sugar, salt, and a splash of water if needed.
- Simmer for 2–3 minutes until thick and smooth.
- Optional: Blend for a smoother texture.
- Let cool and store in an airtight jar in the fridge for up to 1 week or freeze in cubes.
