Ingredients

- 2 cups shelled roasted pistachios (unsalted)
- 1–2 tsp neutral oil (avocado or grapeseed), optional
- Pinch of sea salt, optional
- Optional: ½ tsp honey, cinnamon, or vanilla for flavor
Instructions
- Preheat oven to 350°F if pistachios are not already roasted.
- Spread pistachios on a baking sheet and roast for 6–8 minutes until golden and fragrant.
- Cool slightly and transfer to a food processor.
- Blend by pulsing, then continuously for 5–10 minutes, scraping sides as needed.
- Add oil gradually if necessary for texture.
- Add salt or flavorings to taste, then blend again.
- Transfer to a glass jar and store in the fridge for up to 4 weeks.
Notes
Use warm nuts to blend faster. Add oil only if needed. For extra smoothness, strain through a mesh sieve. Always refrigerate and use clean utensils to extend shelf life.
